I was starving when I left work - feeling nauseated level of starving. And sadly, I have no magical, instantly ready food at home. So I did something I generally prefer not to do. I cooked.

Vegetable Tikka Masala

Qualifier: This is the easy, very basic, cheating way to do it.

One pack of frozen jasmine rice in the microwave for three minutes. This makes enough rice for two people, so half of it went straight into a storage container in the fridge.

1 red potato, sliced thin
5-6 babycut carrots, chopped into half inch pieces
1/4 - 1/2 smallish onion

All sauteed in a pan until the onion is transparent.

Pour in about 1/3 of a jar of premade Tikka Masala sauce and let simmer about ten minutes.

Combine rice and sauce, enjoy!

It's a bit of a shame that I'm so proud of myself for having done something so very basic as throwing a bunch of pre-made foods together. But it was yummy and simple and I need to remember these things. If I remember to go to the store and buy veggies and things like that, I can put together a yummy and quick meal. That 'quick' is important when I'm get home feeling so hungry I'm sick.

And the best part is, I have plenty of stuff left to make it at least once more. :)

And the even better thing you will learn about curry meals is that they generally taste even better the next day :)

I definitely noticed that last week when I made some of the tikka masala with turkey. But I also noticed that when I make enough for more than one meal, I tend to eat more than one meal's worth in one sitting, even if I try to portion it and put the second half away before eating. So for now, I'm sticking to making it one serving at a time.

That's "cooking", to me! Way to go!

(I feel nauseated when I haven't had enough sleep.)

I sometimes wonder how I've managed to reach this point in my life, as clueless as I am about some of these domestic things that other people seem to pick up almost in infancy.

It's *still* cooking! I do like to cook from scratch, but 90% of the time I use convenience foods, like pre-made sauces, pre-cut veggies, etc. The truth is, that sometimes there's not enough time to do something from scratch, and sometimes it's actually *less* expensive to use some kinds of convenience foods!

It would definitely be more expensive to go out and buy all the stuff to make the sauce. The rice was probably more expensive to buy frozen, but so much easier - I'm hopeless at getting rice to come out right on my own.

hey, you cut the potato and carrots and onion, right...you definitely combined the ingredients and waited for them to cook. yum yum.

I did indeed do the cutting, combining and waiting. Perhaps I'm not as hopeless as I think. :)

I'm with ya--cooking is not my favorite activity, which is surprising since I so enjoy eating. Ha!

Yay for you for doin' it!

I don't much love cooking, but I do like having 'real' food to eat!

I let the sauce simmer for a little too long, on slightly higher than recommended heat, I think, because it evaporated down a bit more than ideal, but it was still very yummy.
