I spent today in the unusual (for me) pursuit of cooking. The family tradition for Christmas Eve is potato soup, but the recipe from my mom is pretty grim. Boil some potatoes and add a bit of hard-boiled egg and milk right before serving. Yuck. So I took to the internet to find a good recipe. What I came up with was this, modified somewhat from the original:

A bag of Yukon Gold petites, peeled and cubed
1 large onion, diced
a bunch of baby carrots, chopped up
a stalk of celery sliced
salt
pepper
dried basil
4 c. chicken stock
1 c. water

Throw all this into the crock pot, set on high and let it do its thing for about four hours.

(While that was happening, I walked to the store for milk and ended up buying a full load of groceries to carry home with me. Got home and hard-boiled some eggs for later.)

After the requisite four hours, I added:

3 hard-boiled eggs, roughly chopped
1 1/2 c. 2% milk
1/3 c. cream cheese (approximately)

And let everything cook for another couple hours until LP got home. Once she got home, I warmed up the oven and heated up some garlic bread. I even had the table all pretty for dinner.

I was a bit uncertain how it would all turn out, since I've never actually made potato soup before, but it was really yummy. Success!

We resisted the urge to make many sweet things here. LP made lots of chex mix though, so there's been a lot of munching on that.

The raviolis sound yummy!
