I'm hosting a very small Thanksgiving gathering tomorrow for [livejournal.com profile] ani_no_mouse and me. Like I said, very small, which since I'm doing cooking this year for the first time, I'm pretty happy with. I picked up a few things yesterday at the local corner market but still needed some things that they don't carry. Conveniently, worked closed a couple hours early today so I had plenty of time to get to the grocery store.

After taking a bit of time to relax and eat, I got to work. Emptied the dish drainer, washed all the plastic food containers that had accumulated in the sink. Got the store-bought pie shells in the oven to brown. Made some cranberry sauce, mixed up the pumpkin mixture and got that in the oven, washed another round of mixing bowls and such, ran the dishwasher, cleaned the counters. That's all the food prep I'm doing tonight.

I thought it would be yummy to mix some apple in with the cranberry sauce, but couldn't find a recipe in the admittedly short amount of time I dedicated to the task of searching, yesterday, so I mostly just winged it.

Cranberry Sauce:

one bag of fresh cranberries
1/2 large apple, finely chopped
3/4 cup of sugar
approx 1/2 tsp cinnamon
1 cup water

I let it boil a little too long, so it got a leeetle burned on the bottom. I'm hoping it doesn't set too hard or taste burned, but the little taste I had of it before I put it in the fridge to cool tasted nicely sweet and tart. The apple seems to have blended in well.

Enjoy your Thanksgiving get-together! The cranberry sauce sounds awesome - wish I had thought of that, but the plain berry sauce is pretty awesome too, so I'll just store the idea up for Christmas.

The cranberry sauce was delicious! The apple took just the very edge of tartness off the cranberry, and made it extra yummy.

oooh, cranberry-apple sounds good! Orange juice is another nice thing to add for cranberry-orange too.

I'm glad the cooking is going well so far! We are heading out east tomorrow; D's mom and stepdad made 3:30 reservations at a restaurant in Bedford so we will meet them there and then from there head out to my Dad's. I'm off the hook for any major cooking :D

I actually bought some oranges because I thought about adding them in too, but we put apples and oranges in the cranberry relish and I thought it might be overkill to do the same with the sauce.

My cranberry relish turned out a little differently (i.e., drier) than I expected, too. I used the food processor instead of the meat grinder and the apple pieces really didn't get chopped much, while the cranberries were completely pulverized. I also had to use brown sugar because both 3 lb bags of sugar I had in the cupboard had turned to rock due to the humid summer/autumn. So, it's good to try new things, right?

The turkey breast and sweet potatoes are roasted (I couldn't get a pre-cooked turkey breast as planned, so pre-cooked one myself), so dinner prep should be pretty easy and non-stressful! Yay!

Your cranberry relish definitely had a slightly different flavor than I'm used to, but it was very good, as was everything else you brought along. I'm just about ready now, I think, to finish off the sweet potato for a late dinner. :)
